Le erbe che crescono selvaticamente sono spesso molto più ricche di sostanze nutritive delle piante da insalata coltivate. Le erbe selvatiche contengono  delle quantità elevate di fibre alimentari, vitamine C ed E, betacarotene, folato, potassio, calcio, magnesio e manganese. L’ortica, un erba riconosciuta da tutti, è un vero e proprio concentrato di sostanze nutritive. Contiene varie sostanze e può essere considerata una fonte particolarmente buona di vitamina C, folato, ferro e calcio.
